Cyprus Kefalotiri

Kefalotiri resembles Gruyere in its taste, however the cheese is drier and possesses numerous smaller holes. In Greece the cheese is also known as Graviera, which is rolled in seasoned flour and then fried to make the famous Greek dish Saganaki. Kefalotiri with its rich aroma can be used as an appetizer with fruits and wine, as well as an ingredient in cheese pies.
