2 x 200gr diced chicken breast, 150gr Halloumi cheese cut in 4 parts, 1 spoonful lemon zest, 6 sticks of lemongrass, 1 spoonful honey, 1 spoonful olive oil
Preheat the oven at 160C to 180C.
In a bowl mix olive oil with honey until they totally blend together.
Place chicken and halloumi cheese in an over pot. Place the lemon zest and lemongrass sticks on top and add the honey sauce on top.
Cook for 18 to 20 minutes until the chicken is thoroughly cooked.
- When ready, serve the chicken with a rocket and fig salad.
