Chicken souvlaki never tasted that good. Try this spicy yogurt recipe the soonest.
Ingredients

700-800 gr chicken breast or thighs, cut in small cubes, barbeque wooden sticks, 12 Lebanese pittas, Sliced lemon, Spearmint

Ingredients for spicy yogurt sauce:

300 gr strained yogurt, 1 crushed garlic clove,1 teaspoon ginger, 1 teaspoon cumin,1 teaspoon coriander powder, 1/2 teaspoon cardamom,1 teaspoon sweet paprika, 1/2 teaspoon cayenne pepper, 2 spoon olive oil, 1 spoon lemon juice,15 spearmint leafs, salt, ground pepper

For the pitta:

olive oil, 2 teaspoons cumin, paprika, cayenne and coriander mix, Rock salt

Step by Step

Prepare the barbeque wooden sticks: Wet the wooden sticks in water for 20-30 minutes and then remove

Prepare the souvlaki: Cut the chicken in small cubes and use them on the wooden sticks.

Prepare the spicy yogurt sauce: Mix all the spicy ingredients together. 

Lather the wooden sticks with chicken with the yogurt sauce and the spices in a pot, cover with aluminium foil and place in the fridge for 24 hours to marinate..

How to cook: Preheat the oven grill at 250C.

Place the wooden souvlaki sticks on top of a pot and cover the wooden part with aluminium foil in order to keep them intact from the heat. Cook for 10 minutes on each side. This way the meat will cook thoroughly and yet remain juicy. 

Prepare the pitta: Place the pittas in a large pot, add some olive oil and spices on each and spread. Add some rock salt and place the pot in the oven for 3 minutes

  • Serve the chicken souvlaki in the pitta with extra yogurt, slices of lemon and spearmint leafs.
